Nicola is a registered dietitian, having completed her undergraduate degree in nutrition at the University of Nottingham, and her clinical rotations at the University of Houston.
She completed a Masters in Public Health at Florida International University and a PhD at Imperial College London.
She specialises in glucose homeostasis, with her Diabetes UK-funded PhD work utilising MRI, continuous glucose monitoring and meal tolerance tests in people with prediabetes. She was funded as a Winston Churchill Travel Fellow to visit the University of Colorado, Anschutz, where she worked with Profs Leigh Perreault and Bryan Bergman to explore the relationship between diet and tissue-specific insulin resistance.
She has a particular interest in the role of amino acids and dietary protein in glucose homeostasis and was a Fulbright Scholar at Tuft’s University in Boston with a project exploring sustainable protein sources.
She is committed to contributing to national and international policy statements and guidelines, and was part of the NICE Prevention of Type 2 Diabetes update panel, the Diabetes UK Clinical Studies Group for Type 2 Diabetes Prevention and Management and is a serving member of the Medical Scientific and Research Committee of Heart UK.
She currently works as a Research Fellow at the University of Oxford, and runs a clinical practice part-time.
In her spare-time she enjoys weight lifting, reading, wildlife and is a San Francisco 49ers fan.
